What is a backyard without a charcoal bbq grill?

This classic of the American home has come a long way over the years. While many opt for the more expensive gas grillers, many homeowners opt for the traditional charcoal bbq grill for their weekend barbecues.  There are three top of the line products to consider.

The gas griller is a very convenient unit but what’s the point of grilling outside if you are going to use gas? You might as well fire up your Maytag indoor oven. The results will be pretty much the same. In order to get the well loved char-grilled taste that we all know, then you have to use a charcoal bbq grill.

The Weber Company is well known for making outstanding outdoor grilling machines. One Touch GoldThis is why the One Touch Gold comes on the top of my list of personal favourites. Actually, this is the charcoal bbq grill that I use every weekend at my own home. I’ll tell you why.

The Weber charcoal bbq grill is built to stand the test of time. I’m not always nice to my outdoor equipment. Just ask my lawnmower. This outdoor grill is designed to take punishment and it is designed to be user-friendly, too. Even though it’s simple to use, I really don’t like to share this charcoal bbq grill with other cooks.

The optional rotisserie kit is a must for the serious charcoal king. Make sure that you add this to your shopping list because you can make some amazing meals with this rotisserie and it won’t take much effort. When it comes to the charcoal bbq grill, the Weber stands out among the rest.

The Weber is great for me but I know that some people might opt for something different. I also had my eye on a larger charcoal bbq grill, too. The Big Green Egg is great for the name alone. But you really might like this machine because
it has a rare design that allows you to cook without requiring a lot of attention. The Big Green Egg is ideal for those who like to use smokers.

My third pick is the Char-Griller Outlaw. I like the name of this charcoal bbq grill as much as the Big Green Egg but I really like the cooking space. If you host a lot of big grilling events, then this is the charcoal bbq grill for you. The Outlaw is also a great choice for the frugal bunch, too.

It doesn’t matter which unit you choose as long as you pick a charcoal bbq grill for your home. Gas just won’t cut it.

Barbecue Beef Tenderloin

Holiday Beef Tenderloin : Barbecue Beef

This Barbecue Beef recipe is a definate winner. A real must try for your next garden barbecue.

Wrap a tender beef roast in garlic, rosemary, and pink peppercorns and you’ve got a dinner party. Hint: You can roast the garlic a day or two ahead of time while you are grilling something else.

For the paste:

  • 1 whole head of garlic
  • 3 tablespoons plus 1 teaspoon extra-virgin olive oil, divided
  • 1 beef tenderloin, 3-1/2 to 4 pounds
  • 3 tablespoons whole pink peppercorns
  • 2 tablespoons chopped fresh rosemary
  • 2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper

To make the paste:

Remove the loose, papery outer skin from the head of garlic. Cut about 1/2 inch off the top to expose the cloves. Place the garlic head on an 8-inch square of aluminium foil and drizzle 1 teaspoon of the olive oil over the cloves. Fold up the foil sides and seal to make a packet, leaving a little room for the expansion of steam.

Grill over Indirect Medium heat until the cloves are soft, 30 to 45 minutes. Remove from the grill and allow to cool. Squeeze the garlic from the individual cloves into a small bowl. Add the remaining 3 tablespoons of olive oil and mash the garlic and oil together with a fork to form a paste.

Trim the tenderloin of any excess fat and silver skin. Spread the paste on the tenderloin, rubbing it into the meat.

In a small bowl combine the peppercorns, rosemary, salt, and pepper. Mix well and press into the paste on the top and sides of the tenderloin.

Allow the beef tenderloin to stand at room temperature for 20 to 30 minutes before grilling. Grill over Indirect Medium heat until the internal temperature reaches 135°F for medium rare, 30 to 40 minutes.

Remove from the grill and allow to rest for 5 to 10 minutes. The temperature will rise 5°F to 10°F during this time. Cut into 3/4- to 1-inch slices and serve warm.

Makes 8 to 10 servings.

Barbecue Chicken

Beer Can Chicken BBQ Recipe  : Barbecue Chicken

Try this barbecue chicken recipe for your next garden barbecue.

Here’s a technique that delivers great-tasting barbecue chicken and makes a lively conversation starter as well. We’ve used one of our special rubs, but you can sub in 2 to 3 tablespoons of your favourite one. Bottoms up!

Ingredients For the rub:-

  • 1 teaspoon dry mustard
  • 1 teaspoon granulated onion
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon granulated garlic
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon freshly ground black pepper
  • 1 whole chicken, 4 to 5 pounds
  • 2 teaspoons vegetable oil
  • 1 can (16 ounces) beer (tall boy)

Method:

To make the rub: In a small bowl combine the rub ingredients.

Remove and discard the neck, giblets, and any excess fat from the chicken. Rinse the chicken, inside and out, under cold water and pat dry with paper towels. Lightly spray or brush all over with the vegetable oil and season, inside and out, with the rub.

Open the beer can and pour off half of the beer. Set the half-full can on a flat surface and slide the chicken over the top so the can fits inside the cavity. Transfer the bird to the grill, keeping the can upright.

Carefully balance the bird on its two legs and the can. Grill over Indirect Medium heat until the juices run clear and the internal temperature reaches 170°F in the breast and 180°F in the thickest part of the thigh, 1-1/4 to 1-1/2 hours.

Wearing barbecue mitts, carefully remove the chicken and the can from the grill, being careful not to spill the beer – it will be hot. Let the chicken rest for about 10 minutes before lifting it from the can. Discard the beer. Cut the barbecue chicken into serving pieces. Serve warm.

Makes 4 to 6 servings

Soy Barbecued Shrimp

Barbecue Starter : Soy Barbecued Shrimp

Here's a great little barbecue starter to get your taste buds goin. Soy Barbecued Shrimp, if you haven't tried this one before you really should include it on your next bbq.

Ingredients:

  • 2 lb. large shrimp, shelled and de-veined
  • 1 clove garlic
  • 1/2 tsp. salt
  • 1/2 cup salad or olive oil
  • 1/4 cup soy sauce 1/2 cup lemon juice
  • 3 tsp. finely chopped parsley
  • 2 tsp. finely minced onion
  • 1/2 tsp. pepper

Method:
Place shrimp in a shallow dish. Mash garlic or put it through a press. Blend in remaining ingredients. Pour over shrimp. Refrigerate covered, 2 to 3 hours. Place shrimp on skewers if they are small. Cook on gas grill about 3 to 4 minutes on each side until done throughout. Serve with cocktail picks.

Spiced Marinade

Barbecue Marinade : Spiced Marinade

Marination, also known as marinating, is the process of soaking foods in a seasoned, often acidic, liquid before cooking. It is a mixture of vinegar or wine and oil with various spices and seasonings. This spiced marinade is a particlular favourite.

  • 4 tbs oil
  • 300 ml (1/2 pint) red wine
  • 2 tsp Schwartz Chili Powder Mild
  • 2 tsp Schwartz Season-All Seasoning Simply Shake Seasoning
  • 1/2 tsp Schwartz Garlic Salt
  • 1/4 tsp Schwartz Coarse Ground Black Pepper

Combine the ingredients thoroughly and use to marinate steak and red meats before grilling and barbecuing.

Makes approx 300ml.

Steak and Ale Barbecue Beef

Barbecue Recipe : Steak and Ale Barbecue Beef

This is a quick and easy Steak and Ale Barbecue Beef Recipe

  •  2 lbs. ground beef chuck, to serve six
  • 1 large sweet white onion, about 3" diameter
  • 3 slices stale or oven-dried rye bread
  • 1/3 tsp. crushed caraway seeds 1/3 bottle ale, at room temperature
  • 1 tsp. salt
  • 1/2 tsp. freshly ground pepper
  • white of one fresh egg


Loosen the meat by spreading it on a mixing-board. Peel and scrape the onion. Trim the crusts from the bread and combine it in a bowl with the onion pulp, caraway seeds, ale, salt, pepper and the meat.

Work the mixture with your fingertips until the meat has assimilated the seasoning, bread-pulp and liquid.

Form the meat mixture into patties, beat the egg white lightly and brush on the patties.

Cook on the grill over moderate heat, turning the patties only once. Serve with crispy-toasted rye bread and ale.

To ensure that your barbecue goes smoothly there are a number of barbecue tools that are absolutely essential, and will aid your cooking immensely.

The most important tools include long handled tongs, forks and Spatulas for turning over food and removing them from the cooking area.

The use of oven mitts cannot be over emphasied, the barbecue generates a substantial amount of heat so to use them for for removing cooked food, especially foods that are secured or held with metal will prevent burns.

Ideally you will have a variety of skewers for kebabs, for stuffings and for holding rolled foods together, these  can be metal or bamboo and a basting brush preferably with a long handle for brushing on glazes.

Hinged wire racks for fish, sausages burgers and smaller amounts of food, this makes it a lot easier to turn the food over and will help stop it breaking up or falling into the barbecue.

There are a number of items while not a necessity do make the whole barbecue experience a lot easier, such as the kebab rack which can hold several kebabs at the same time, keeps the food away from direct contact from the rack and makes it easier to turn over, and remove when cooked.

If you really want to impress your friends you could choose to use a rotisserie which is fabulous for cooking larger joints of meat.

Useful items include a wire brush and scraper for cleaning up afterwards, plus a plastic or canvas cover to protect your barbecue form the inclement weather.
